The Oven Panel is back at 2019 Technical Conference. This year, we are exploring moisture control in the oven for cracker production. Rich Mcfeaters, will present on the cracker formula and briefly review the leavening action and moisture control chemistry taking place throughout the baking process. For a more in depth discussion, industry experts Kevin Knott of Franz Haas, Joe Zaleski of Reading Bakery, and Tim Clark of Radio Frequency Co will discuss the processes and mechanics of what happens inside the oven to produce a cracker and how to prevent checking.

About the Speakers:
Rich McFeaters is a Technical Advisor for the American Bakers Association. He serves on the Education Committee and is contributor to core education programs. He was a principal writer and contributor to the second edition of the Cookie & Cracker Manufacturing Course.
He was a Research Principal in Mondelez International’s Global Process Engineering Group, with over 35 years in the product development group beginning with Nabisco, and continuing through the various corporate changes; RJR Nabisco, Kraft, and then Mondelez International. Rich received several prestigious awards and holds five patents for product and process design. He developed and commercialized such well-known products as Ritz Bits, Teddy Grahams, SnackWell’s, and other cookies and crackers.
Rich has a passion for sharing his experience with the next generation of bakers.
Joseph Zaleski, President of Reading Bakery Systems, graduated from Penn State University with a degree in Engineering and has over 30 years of experience in the baking and snack industries. As President, Joe is tasked with providing a vision for the company moving into the future. He will continue the company’s technical leadership edge through partnerships with industry and academia, and finding, evaluating and implementing new technologies. Joe has presented many technical papers at conferences within the cookie, cracker and snack industries. Joe, along with other members of the company, holds numerous patents for innovative designs in food forming and baking machinery.
Timothy Clark, President and CEO, Radio Frequency Co. is a graduate of the University of Arkansas at Fayetteville with a BSBA degree in Marketing. He has worked for Radio Frequency Co., Inc. for over 20 years, starting in sales and marketing, and has served as president and CEO for the last 8 years. He is a long-standing-member of the B&CMA, and the AACC & IAOM. He is the proud father of four and a published author, Life, Funny Side Up.
Kevin Knott has a B.Sc. in Engineering from Sheffield Hallamshire University in UK. As a Technical Sales Manager at Franz Haas Machinery of America Inc., Kevin assists customers purchasing new bakery production equipment. He has worked in all technical and engineering aspects of the baking industry since 1984 and has been in North America since 1991.
